Xinh, So sorry to hear you are sick, but if attitude counts for anything you will surely beat this because you are so kind, giving and happy. We met some years ago at the Oyster Festval/ Mud-Run at Taylor Farm in Skagit County. That first day I had your curried mussels for breakfast and again for lunch and then dinner. I was so happy to find you at the Shelton Festival a few years ago ( sorry can’t remember the name) where I again had your delicious mussels and picked up a copy your cookbook. Xinh....I've known you for 40 years...I was 15 years old and working at the 76 gas station at Schnider's Prairie. You had your homemade eggrolls for sale at Pat's Market. We were always excited when a package hadn't sold and you were restocking the market and you would stop by and give us the eggrolls. They were as delicious then as they are now. X and our 3 families have shared food and memories since she became a charished friend with her arrival in Olympia. We have cooked for families of Providence Christmas Forest, with Xinh giving far beyond expectations. Not to forget her ever caring concern for others. Four generations of the Skillman family have many stories of being with Xinh. Xinh you are the most joyous and caring person I know.
